Mom's Biscuits

I just love having homemade biscuits and whenever my mom comes to visit I get her to whip a batch of her biscuits for us to munch on. Now, my mom has been baking good stuff for us all my life (LOL) and we were always the taste-testers. Her biscuits recipe is always the one I crave....

Give it a try and see if you feel the same way.

Mom, I hope you don't mind me sharing your recipes but they are so good, I just had to. Love you.

Ingredients:
3 cups of all-purpose flour
3 heaping tsp. baking powder
3 tbsp  of white granulated sugar
pinch of salt
splashes of milk

The process:
Preheat oven to 350 degrees
Mix, or sift,  all the dry ingredients together. I sometimes do 1/2 a-p flour and 1/2 whole wheat of 1/4 a-p- flour and 3/4 whole wheat...but Mr. Man not a big fan of this change. My pinch of salt is a little less that 1/4 tsp.
Then I add in the shortening, mushing it with my hands. Lately I have switched it up for the butter, first because I didn't have any shortening and secondly 'cause it  makes a richer biscuit (I grate in the butter when I do, easier to combine). Finally, I pour in a splash of milk and mix it with my hands and add more smaller splashes as I mix with my hands until it is stuck together but not sticky. Flour the surface and knead the dough slightly, not too much because it won't rise to get those fluffy biscuits that is good with strawberries. Roll out the dough to about 1/2 inch thickness and cut out the circles (I usually use a glass- juice or drinking depends on the size you want your biscuits). Place on baking sheet, no need to grease it. Bake in preheated oven until golden brown about 18-20 minutes depending on how your oven runs. I keep an eye on them so they don't get too dark. Remove from oven, eat warm with jam or molasses or the topping of you choice OR let cool and top with berries of you choice. Me personally, I like them still warm and out of the oven plain.

This recipe is vesatile because it can be used as a cinnamon biscuit recipe as well just by melting butter, smearing over the rolled out dough then adding in the cinnamon- brown sugar on top then rolling into a log and slicing off pinwheels. Baking time is about the same and at the same temperature. Until lightly browned usually.
