Here it is:
Meatballs:
2 lb. ground beef, (works with ground chicken & turkey, I have tried both)
1 large egg
1 pkg onion soup mix (optional)
a pinch of garlic salt (optional)
a pinch of each salt & pepper
Option (I have done this too)
handful or two of panko or breadcrumbs to add a little extra substance to the meatball
1/2 chopped onion
Mix together with your hands, I use gloves sometimes, them make into meatballs (I ususally make them about 1-1.5" in diameter). Place them on a parchment paper lined cookie sheet. Bake at 350 degrees for 25 mins. or until browned. Set them aside.
Sweet & Sour Sauce
1/2 c. packed lite/dark brown sugar (I have substituted with Splenda Brown Sugar and used 1/4 c.-1/2c.)
1 c. water, can substitute with pineapple juice
2/3 c. ketchup ( I sometimes add a little more)
1/2 c. white vinegar, can substitute with pickle juice
Place all the ingredients in a medium to large saucepan over a medium heat. Take 1/2 c. of sauce and mix in 2 tbsp of cornstartch (to use as a thickener, by making a slurry) and add back into the saucepan. Bring to a low boil and add the meatballs in to the sauce to reheat or pour over the meatballs if right out of the oven.
Serve with rice or noodles depending what you prefer.
***Also can be made into a meatloaf recipe by just forming into a loaf and baking at 350 degrees for 1 hr or until it separates from the sides and juices run clear when press on....I usually bake it 1 hr and 20 mins to be safe.
